Luggage check in at resort
I am wondering something. Last time we were at Disneyworld in 2010 we did the luggage check in at our resort. We checked it around 10am and then headed off to Downtown Disney for lunch and then came back for the magical express pickup at 1pm. This time we are flying out at around 6:30 pm. Will we still be able to check out bags at the resort? I ask because I just read somewhere they close at 12 noon.

Yes, you will still be able to check your bags at the resort. The baggage check in is only open from 5am to 1 pm. But that's just the counter at the resort. Bags will still be transported to the airport and put on later flights. You can check your bags in any time while the counter is open, regardless of when your flight actually is. You MUST check your bags in at least 3 hours before your flight - but that won't be a problem in your case.
Most of our flights out aren't until 4 or 5 pm. I always check our bags in by 8am.
Using the service is just like using the curbside skycap service at the airport (and should be tipped similarly). These are not Disney employees, but a third party service. It's a fantastic service and makes that final day so much more pleasant. In addition to checking your luggage, which you won't see again until you arrive at your home airport, any carry ons can be left with bell services at the resort and retrieved upon you return to the resort to catch Magical Express. Just leave yourself enough time to collect your bags.

The times are not correct. The hours have changed and are now 5am to noon.

As Steve mentioned, regardless of your flight time, you can check your bags in at any time (during their open hours of course). We usually check them in around 630am on our last day and our flights have never been earlier than 6pm.

I forgot to mention and it should be noted as well; we usually leave our carry-ons with the Bell Hops and pick them up once we return from the parks prior to our Magical Express pick-up. That frees you up for the entire day.

I would suggest to double check the times with the individual resort you are staying at. CR in May closed at 11AM and there were a few upset people we saw while we were waiting for our bus to the parks.
