I agree with all of this. I hear people say the later you eat the drier the meat will be and I just don't get it. The meat is not cooked at opening and sitting out all night!
In our 15 trips to Ohana's we've eaten at all different times, first seating, 6ish, 7pm, 8pm, even as late as 9:30 pm, and we've never noticed a decline in food at the later seatings. Sure there have been times the meat wasn't cooked to our liking, and we asked for it cooked a different way, but that's just personal preference, had nothing to do with the time of our ADR.
