We were there a few years ago at Christmas--I think the 22 thru 28th and (ACK!) stayed off-site. We have a Marriott timeshare, and this was the best deal for us.
We had a GREAT trip and didn't find the crowds as daunting as people have said. Yes, it was crowded, but we did everything we wanted, just maybe only once, not several times.
We did MK on the 23rd--wasn't terribly crowded; EPCOT on Christmas Eve--World Showcase was very crowded, but Future World was very manageable. We didn't do a park on Christmas--we visited the resorts to check out the decorations and had dinner at California Grill to watch the fireworks. On the 26th we did DHS--crowded yes, but not awful.
Animal Kingdom on the 27th was extremely crowded--my folks dropped us off (three adult kids--21 to 35) in the morning and came back at noon to meet us. The parking lot was closed and they were diverting people to EPCOT--my mom told the attendants that she dropped her kids off earlier (not mentioning our ages!) so they let them into AK.
So, long story short--I think you will have an awesome trip--being off-site didn't hinder us much and I don't remember there being terrible traffic jams or delays in driving. Have fun and enjoy all the Holiday magic!

Next Trip--40th Birthday at Contemporary--September
I might suggest planning on visiting MK the 22nd (if your travel plans get you there early enough) or the 23rd. Many public school vacations only begin on the 23rd so I would imagine the major crowd spike will occur on Sat the 24th.
My family and I are going from 12/21-12/26 and can't wait! We've been in Epcot on New Year's Eve twice so we are prepared for Christmas week crowds.
