The Earl of Sandwich for lunch or dinner, followed by a hot fudge sundae at Ghiradellis. Not expensive, and the most delicious sandwich I have ever had.
Part of the fun of a solor trip is that you get to do exactly what you want to do on your own schedule without having to consider what others might want to do!
At Downtown Disney, I would likely do some wandering and shopping. I might consider the balloon ride.
If not planning to tour the parks (though, personally, I don't think I could go and not tour any of the parks), I would also plan to spend some time hanging out at my resort and/or possibly exploring some of the other resorts.

If I had Disney to myself I would go for a massage. We have one scheduled in January at the Dolphin/Swan Resort - Mandara Spa. Follow it up with a treat from the bakery on the boardwalk and a water taxi ride. Just a thought!

We like to eat in DTD, you'll find good food at Earl of Sandwich and Wolfgang Puck Express. Wolfgang Puck Cafe is also a very good sit down restaurant. Raglan Road patio bar has a happy hour if your into that.. and a place to grab some yummy fish and chips right there.
Like Beignets (delectable deep fried dough smothered in powdered sugar)? Take the boat from the DTD dock up to Port Orleans French Quarter and have some of these with a nice cup of cappuccino. If you like walking, follow it up with a nice stroll or another boat ride, to PO Riverside, where they have a marina renting boats, kayaks, bikes, etc. There is also pole fishing on this property. They have a very nice shop in the lobby.
You can take a bus to any of the other resorts from DTD.
Take a ride on the monorail.
The Boardwalk is fun to stroll at night when all the entertainers are out.
Fort wilderness offers fun things to do as well. All the work horses live here and you can visit them. They also having fishing and boating on the canals, horse back riding and the Hoop Dee Doo revue.
The other resorts offer several eating choices and a massage would be very high on my list too.
Thanks all for some great ideas. I really enjoy DTD with a Pina Colada and a bench but will venture out and do a bit more this time.
May just have to do some pole fishing at PO, never fished for poles before.
