I have not stayed at the Swan or Dolphin, but I really do like Westin resorts. Their spa was great when I went there, too.
Swan and Dolphin are nice and being at boardwalk is a great location - just be sure to watch because the resort fees are high.
Also, Disney Springs is a great choice if you want to just walk over to the nighttime shopping and dining. My wife and I really enjoyed staying at Saratoga DVC because of that. We weren't playing theme park commandos that trip.
I have stayed at both the Swan and Dolphin and also at a couple of the Hilton brand hotels in the Disney Springs area across the street. The Swan and Dolphin are more like a typical hotel than any of the Disney resort hotels. They are pretty much comparable to the hotels in the Disney Springs area. The main differences are price (the Disney Springs hotels typically have better rates and lower fees) and convenience to what you want out of your trip (Swan and Dolphin are on the Boardwalk and walking distance to Epcot. Disney Springs resorts are walking distance to Disney Springs but you have to take a bus to the TTC or a Disney Resort and then switch to a bus to the Park.)
Because there are no discounts for early December; we chose to stay at the Swan vs Disney Springs. I like staying on the boardwalk much better than Disney Springs. I've never stayed at the Swan; but family members stayed there in July and loved it.
